Zahmari, from Windsor, submitted this recipe. Make this muffin-style oatmeal recipe ahead of time and warm it in the oven for a great breakfast. Add some yogurt for school or the office.

Choose your favoruite fruit combinations like pineapple or blueberry with dried cranberries or apricots.

Oatmeal Cupcakes: For a fun idea, spread Greek yogurt over the top of each oatmeal muffin and sprinkle with raisins or other dry fruit, kids will love it!
Ingredients

Large flake oats |
3 cups (750 mL)

Ground cinnamon |
2 Tbsp (30 mL)
|
Baking powder |
2 tsp (10 mL)
|
Salt |
¼ tsp (1 mL)
|
Milk |
1 1/2 cups (375 mL)
|
Eggs |

Unsweetened apple sauce |
½ cup (125 mL)
|
Canola oil |
¼ cup (60 mL)
|
Diced apple |
¾ cup (175 mL)
|
Raisins |
¼ cup (60 mL)

Directions

In a large bowl, combine oats, cinnamon, baking powder and salt.

In another bowl, whisk together milk, eggs, apple sauce and oil. Pour over oat mixture and stir to combine. Stir in apple and raisins.

Divide mixture among 12 lightly sprayed muffin tins. Bake in preheated 350°F (180°C) oven for about 30 minutes or until tester inserted in centre comes out clean.

Serve warm as is or with a drizzle of maple syrup.
