2017 Kids Recipe Challenge Winning Recipe: 2nd Place! [Breakfast]
This popular food trend makes gluten free families super happy. For a large family use the oven to pre-bake the slices so you can simply pop them in the toaster first thing in the morning. Or enjoy them as a snack after school while chatting about the kids’ day.
Kasey who’s in grade 4 in Toronto says this recipe tastes so good when the almond butter is warm and melty and you can taste the sweetness of the banana and sweet potato. Give it a try!
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 6 to 8 slices

Toaster Variation: Kids can pop slices of sweet potato into the toaster. It will take a few times in a standard toaster to get the slices soft enough. Let cool and repeat with remaining slices.

Nut butter (almond, peanut, soy, cashew or sunflower) |
3 Tbsp (45 mL)

Banana, apple or pear (sliced) |

Hemp seeds |
1 Tbsp (15 mL)

Ground cinnamon |
½ tsp (2 mL)

Directions

Slice potato lengthwise into 1/4 inch (5 mm) slices and place on a parchment paper lined baking sheet. Bake at 400°F (200°C) oven for about 10 minutes or until tender.

Spread with nut butter and top with fruit and hemp seeds. Sprinkle with cinnamon, if using.
