Hawaiian Enchiladas

2015 Kids Recipe Challenge winning recipe: 1st place!

Jaden, from Goderich, created this recipe. It’s a spin on a pizza favourite! Use different toppings to change up the flavours. 

Preparation Time: 15 minutes

Serves: 6

Tips

  1. You can substitute tomato or pasta sauce for the pizza sauce.
  2. You can substitute 3 chopped slices of ham or turkey for the bacon.
  3. For an easy pizza, don’t roll up the tortillas. Instead, place them flat on the baking sheet. 

Ingredients

Small flour or corn tortillas

Unsalted pizza sauce

1 ½ cups (375 mL) 

Cooked turkey bacon, chopped

6 slices 

Baby spinach

2 cups (500 mL) 

Red bell pepper, chopped

Chopped pineapple

1 cup (250 mL) 

Shredded light mozzarella cheese

1 ¾ cups (425 mL) 

Chopped fresh basil (optional) 2 Tbsp (30 mL)  

Directions

  1. Lay tortillas on work surface and spread 2 Tbsp (30 mL) of pizza sauce on each.
  2. Sprinkle each with turkey bacon, spinach, pepper and pineapple.
  3. Top each with cheese and basil, if using.
  4. Roll up and place in small baking dish.
  5. Pour remaining sauce over top.
  6. Bake in preheated 350°F (180°C) oven for about 15 minutes or until warmed through and cheese is melted.
