Elisha, from Thornhill, loves these pancakes. This flavour combination is a great start to the day. Have some fun with these pancakes and make them into shapes.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: About 14 pancakes
Ingredients

All purpose flour |
3/4 cup (175 mL)

Large flake oats |
1/2 cup (125 mL)
|
Ground flax seed |
1/4 cup (60 mL)
|
Granulated sugar |
2 Tbsp (30 mL)
|
Baking powder |
1 Tbsp (15 mL)
|
Pinch salt |
|
Eggs, separated |

Plain 0% Greek yogurt |
1 cup (250 mL)
|
Milk |
2/3 cup (150 mL)
|
Each canola oil and butter, melted |
1 Tbsp (15 mL)
|
Cinnamon Apple Topping |
|
Honey Crisp apple, sliced |
1 large
|
Water |
1 Tbsp (15 mL)
|
Ground cinnamon |
1/2 tsp (2 mL)

Directions

In a large bowl, whisk together flour, oats, flax seed, sugar, baking powder and salt.

In another bowl, whisk together egg yolks, yogurt, milk, oil and butter. Pour over flour mixture and stir to combine.

Beat egg whites until stiff peaks form. Gently fold into pancake batter.

Heat a griddle or large nonstick skillet over medium heat and using 1/4 cup (60 mL) measure, pour pancake batter onto the pan.

Cook until bubbles appear on top, about 2 minutes and turn over to cook other side.

Repeat with remaining batter.
Cinnamon Apple Topping

Meanwhile, in a small saucepan, combine apples, water and cinnamon.

Cover and steam over medium heat about 5 minutes or until apples are softened.

Top pancakes with apples to serve.
