Jack’s Special Veggie Bread

2011 Kids Recipe Challenge Winning Recipe: 1st Place!

Jack, from Mississauga helps his mom make this bread. Adding the vegetables was his idea to add colour and flavour. Frozen or fresh whole wheat pizza dough can be found in the bakery section of the grocery store.

Preparation Time: 30 minutes

Cooking Time: 50 minutes

Serves: 16 slices 

Ingredients

Red bell pepper, thinly sliced  

Yellow bell pepper, thinly sliced

Carrots, thinly sliced 

2 large

Olive oil 

2 Tbsp (30 mL)

Dried thyme leaves 

1 1/2 tsp  (7 mL) 

Whole wheat pizza dough 

1 bag (680 g) 

Shredded cheddar cheese 

1/2 cup  (125 mL) 

Directions

  1. In bowl, combine peppers and carrots. Drizzle with oil and thyme; stir to coat well.
  2. Spread onto parchment paper lined baking sheet and roast in 220ºC (425 ºF) oven for about 20 minutes or until tender and golden. Set aside.
  3. Roll out dough onto lightly floured surface to 40 x 25 cm (16 x 10 inch) rectangle.
  4. Sprinkle dough with roasted vegetables leaving 2.5 cm (1 inch) border on one long edge.
  5. Sprinkle with cheese and starting from long end end, roll dough jelly roll style pinching ends to seal seam.
  6. Place seam side down on large parchment paper lined baking sheet and bake in 200ºC (400ºF) oven for about 30 minutes or until crust is golden and sounds hollow when tapped.
  7. Let cool before slicing and serving.
