Kids Recipe Challenge winning recipe: 3rd Place!
Sophie, in Kitchener, loves this nutritious and colourful lunch.
Instead of buying packaged convenience food containers, make your own! Pack the different parts of this “sandwich” for lunch at school. It’s a little messy because you don’t need any utensils - but that’s why kids would love making this recipe.
Preparation Time: 5 minutes
Makes: 5 mini sandwiches
Ingredients

Tuna in oil |
1 small can (85 g)

Leaf lettuce, chopped finely |

Mustard or relish (optional) |
1 tsp (5 mL)

Whole grain crackers |

Directions

Drain can of tuna, reserving one teaspoon of the oil.

In a small bowl, stir together tuna, reserved oil, lettuce and mustard.

Divide tuna mixture among 5 of the crackers and top with remaining crackers.
