This recipe was submitted by Ishaan who’s in grade 3 in Vaughan, ON.  Ishaan likes to help measure the ingredients and sprinkle the cheese.  This is a unique way to use quinoa. 

Preparation Time: 15 minutes

Cooking Time: 60 minutes

Serves: 4 to 6 

Tips

  1. Use tri coloured quinoa to give the casserole a different look.

Ingredients

Quinoa

1 cup (250 mL) 

Vegetable or chicken broth or water      

2 cups (500 mL)

Chopped broccoli florettes  

1 cup (250 mL)

Chopped onion           

1/2 cup (125 mL)

Shredded old cheddar cheese, divided   

1 1/2 cups (375 mL) 

Milk     

1/2 cup (125 mL) 

Pepper    

1/4 tsp (1 mL) 

Directions

  1. In a saucepan bring quinoa to boil with broth. Reduce heat to low; cover and cook for about 15 minutes or until liquid is evaporated and quinoa is tender. 
  2. Stir in broccoli, onion, 1 cup (250 mL) of the cheese, milk and pepper.
  3. Scrape into a greased 8 inch (1.5 L) square baking dish. Sprinkle with remaining cheese over top.
  4. Bake in 350°F (180°C) oven for about 35 minutes or until heated through and cheese is melted.
