Blueberry and Tomato Bruschetta

The added blueberries to this bruschetta mix make it extra special, colourful and appealing to children. Kids can make the recipe on their own to enjoy with friends.

Seven year old Logan from Markham aspires to be a chef when he grows up.  He loves being creative, cooking in the kitchen, and eating healthy foods!  This is a unique combination of some of his healthy favourites.

Makes: 24 slices

Ingredients

Cherry tomatoes, quartered 

2 pints (255 g each)

Basil leaves, chopped 

8 fresh

Fresh blueberries 

1 cup (250 mL)

Extra virgin olive oil 

3 Tbsp (45 mL)

Aged balsamic vinegar 

1 Tbsp (15 mL)

Salt 

1/4 tsp (1 mL)

Crumbled feta cheese 

1/2 cup (125 mL) 

Baguette, sliced 

Directions

  1. In a large bowl, stir together tomatoes, blueberries and basil.
  2. In a small bowl, whisk together oil, vinegar and salt. Pour over tomato mixture and add feta. Stir gently to combine.
  3. Spoon mixture onto baguette slices to serve.
