2017 Kids Recipe Challenge Winning Recipe: Honourable Mention [Snacks]
This recipe was submitted by Miranda, who is in grade 7 and lives in Thamesford. Miranda says that kids will like this soft, yummy cookie that is easy to make. Be sure to get the kids in the kitchen and help measure and roll the cookies before they bake.

Bake Time: 10 minutes per batch
Makes: about 40 cookies

Simplify this recipe by skipping the hemp hearts and chia seeds. Just increase the ground flax to 1/4 cup (60 mL) instead. They will still taste great.
Ingredients

Ground large flake oats |
1 cup (250 mL)

Whole wheat flour |
1 cup (250 mL)

Ground flax |
2 Tbsp (30 mL)

Hemp hearts and chia seeds |
1 Tbsp (15 mL) each

Ground ginger |
1 1/2 Tbsp (22 mL)

Kosher salt |
1 tsp (5 mL)
|
Butter |
3/4 cup (175 mL)
|
Granulated sugar |
1 cup (250 mL)
|
Egg |
1

Egg yolk |
1
|
Fancy molasses |
1/4 cup (60 mL)
|
Chopped pecans |
2/3 cup (150 mL)
|
Sweetened shredded coconut |
2/3 cup (150 mL)

Directions

In a bowl, whisk together oats, flour, flax, hemp, chia, ginger and salt; set aside.

In a large bowl, beat together oil and sugar until fluffy. Beat in egg and egg yolk. Beat in molasses. In three additions add flour mixture. Gently stir in pecans and coconut.

Roll heaping tablespoonfuls of dough and place onto parchment paper lined baking sheet. Bake in preheated 350°F (180°C) oven for about 10 minutes or until set.

Repeat with remaining dough.
