This savory Indian egg dish, made with chili pepper and ginger among other ingredients, is sure to add some spice to your day.

Red chili powder (optional) |
1/4 tsp (1 mL)

Canola oil |
1 tsp (5 mL)

Green chili pepper, chopped |

Chopped onion |
1/2 cup (125 mL)

Chopped tomato |
1 cup (250 mL)

Frozen peas |
1 cup (250 mL)

Piece of ginger, grated |
1 inch (2.5 cm)

Garam masala powder |
1/2 tsp (2 mL) |
Chopped fresh cilantro |
1 tsp (5 mL)

Directions

Beat eggs and egg whites in a bowl. Add the chili powder, if using. Set aside.
In a fry pan, heat oil over medium heat. Add the chili pepper and onion and cook until soft. About 3 minutes.

Add the tomatoes, peas, ginger and garam masala. Cook for 3 minutes.

Add the egg mixture and stir while cooking for 3 to 5 minutes. Sprinkle with cilantro and serve immediately.
