Parmesan Carrot Fries

2017 Kids Recipe Challenge Winning Recipe: 1st Place!  [Side Dish]

Grace in grade 3 from Metcalfe, says these fries are fun to dip and very tasty. Get the kids to help roll the carrot sticks in the breadcrumb mixture and line them up like soldiers; perfect for small hands.

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serves: 4 to 6 

Ingredients

Carrots, peeled

5 units

Canola or olive oil

3 Tbsp (45 mL)

Seasoned breadcrumbs      

1/2 cup (125 mL) 

Grated Parmesan cheese

1/4 cup (60 mL)

Ranch salad dressing or dip  

optional

Directions

  1. Cut carrots into sticks and place in large bowl.  Toss with oil to coat.
  2. In a shallow dish, combine breadcrumbs and cheese. Roll carrot sticks into breadcrumb mixture and place on parchment paper lined baking sheet. Roast in 400°F (200°C) oven for about 20 minutes or until golden and tender.
